Cocas de patata de Valldemossa

Here you have the recipe for this genuine sweet of Valldemossa.

Ingredients: 1/2 kilo of bread flour, 350 grams of boiled potatoes, 200 grams of sugar, 75 grams of lard (preferably homemade and not industrial), 3 eggs of domestic fowl , a knob of compressed yeast (pastry), 1/2 to ¾ cup of warm water and finally ½ cup of extra virgin olive oil Moix.
Instructions: First wash and boil potatoes with skin in water for about 20 or 25 minutes. When they are cooked, cool down, strain them, peel them and mash them paying special attention to avoid lumps. In the basin where we will make the dough, mix the mashed potatoes with the remaining ingredients, kneading with your hands until the dough has the right texture. Form a sort of spherical shape with the dough and cover it with a white cloth, leaving the basin in a dry, draft-free and warm place. After two or three hours the mass will be weighed, then take the opportunity to knead again (to remove air from fermentation) and make balls of dough the size of a coca de patata. The recipe ingredients serve about 12 coca de patata.
Spread a baking sheet with lard and bake from 25 to 30 minutes in a preheated oven at 180 º C-200 º C. Place the 12 pieces on  the tray with enough separation between them because during baking they will grow.
